What I Eat In a Day #2

I love reading peoples What I Eat in a Day posts. I don’t know why, but I find them really interesting. I try to eat pretty healthy and balanced. Since I workout I try to make sure I’m eating enough protein and just enough food in general. I’ve gotten a lot more into nutrition over the past few weeks and my diet has slowly been changing. I took the photos for this post on a Monday and this way a very typical day for me as far as what I ate.

Breakfast: Avocado Pudding: This is one of my favorite recipes! It tastes so good and keeps me full until lunch. I played around with the recipe until I found a combination that I really liked, so if you do try this out try customizing it to fit your likes. I usually have this twice a week, its great for days when I have a lot to do in the morning.

Ingredients- 1/2 an avocado, 1/2 cup blueberries, 1 tab water or almond milk, 1 tsp honey, 2 tab almonds

Instructions- put the avocado, blueberries, water and honey in a blender or food processor and mix well. Once blended put in a bow and put almonds and blueberries on top

Lunch: Chicken Breast with Noodles and Peas

This was my throw something in a bowl quickly lunch. This is typically what happens on busy days. It doesn’t look very appetizing, but it tastes quite good.

Snack 1: Smoothie

Ingredients- Raspberries, blueberries, almond butter, water

Snack 2: Skinny pop

Dinner: Chicken salad with sweet potato fries. My lunch and dinner are often very similar. Its really easy to cook two chicken breast, eat one at lunch, and save the other one for dinner to cut down cooking time. I also ate about half of my fries before taking a picture of them, so sorry about that. 

Desert: Baked apples with sliced almonds

Snack 3: Vanilla waffers
